Oh interesting. They kept saying technical difficulties. This makes it even funnier that holly got so mad.

I honestly think she was more annoyed with the production team. It seemed like Sark ran off to go sing The Eyes of Texas with the team, so they might've held him up from something actually important to him twice in a row. Given it was into the camera, the look was giving, "Production, why can't you tell Kirk and Chris to shut the fuck up for long enough to get at least one quote from this fucker today?" This is coming from someone who was in broadcasting for several years and saw looks like that many times. On-location talent and camera ops have a habit of getting pretty pissy with production when they miss a shot or cut down a segment they had lined up because they let the studio talent yammer on about something asinine.

Was Herbie going over how many draft picks the Buckeyes had in the past two years again?

Yes, once we started coming back, he went on and on. Hey, Herbie, you're supposed to be unbiased, remember?

Can't they just record those interviews and play them a few minutes later when it's convenient?

They absolutely can, but it will all just depend on what the plan is going in. As with anything in television, a recorded segment takes a bit of effort and planning. I'm satisfied ESPN is set up to run multiple workflows at the same time more than the small channel I worked at, but it is kind of a thing to record a live to tape segment while you're on air. For the first one, I gather that was their intent, but something didn't go off with it. For the postgame interview, you'd probably aim to do that live, so you don't have to go through the trouble of recording a segment that you're gonna play 45 seconds later. For our channel, we'd rarely do live to tape segments that were intended for broadcast during a live program, and I don't recall much of any being quick turnaround. A lot can go wrong with those types of things, so you want your production team to have some QC time before putting things on air, which is why our live programs were almost entirely true live (sometimes 20 second delay for programs that needed it) or pre-recorded and edited packages that the producer and director would QC prior to broadcast.

It likely was a technical difficulty. They tape the second coach interview, it isn’t live. So Sark wasn’t waiting for the Day interview to finish (or shouldn’t have been).

Professionalism goes both ways. He has a job to do same as her, and wasting his time is unprofessional on the networks part, even if it's not Holly's direct fault.

He didn't "treat Holly disrespectfully" How long does he wait?.... he does have a job to do.

It's a post game interview. They are utterly meaningless and a waste of everyone's time. Holly provides no value whatsoever.

I disagree. Who doesn't want to see the immediate reaction?? Mean, over serious take.

Uh, you can still see their reaction without an interview...? It's the interview that interrupts the reaction, forcing them to awkwardly compose themselves only to utter off ritualized, forgettable nonsense. Though you can sometimes catch a glimpse of their reaction when they drop the act and return to celebrating in the brief second between the end of the interview and the camera cutting away.
