Substituting pickled peaches for grilled dessert peaches

I am trying to make an appetiser for a dinner on Friday and this recipe looks great but it calls for pickled peaches which I do not have and which I am nervous to try on the day - could I substitute it for soft grilled dessert peaches?

It seems fairly simple as it is just pickled peaches on a skewer with prosciutto, a piece of basil and a mozzarella pearl with herb vinaigrette.

I don't expect it to taste identical, I am just curious if it could still complement the other ingredients and if the texture will clash.

Thanks!!

Grilled peaches will work fine here. The sweetness from the fruit is doing the heavy lifting alongside the salty prosciutto anyway, you're just trading tangy for smoky. Texture wise you might actually prefer it since pickled peaches can get a little slippery on a skewer while a grilled one with some char on it will hold its shape better. Just don't overdo the heat or they'll turn to mush.

One thing to be weary of is soft grilled peaches are likely to just slip off of the skewer when people pick it up, unless you grill underripe peaches quickly and they maintain their integrity.

You are correct that it'll certainly be different, but it still sounds quite good. I would still make an herb vinaigrette along the lines of what's in the recipe, as you'll still want that acid.

underripe peaches holding together better for skewering, how underripe are we talking? like you can still smell them ripening on the counter or borderline rock hard? asking cause i'm picturing peak farmers market peach that's basically jam on the inside and i'd hate to tell someone to grill those lol
