Question How nice/flexible is Thai airways?

I am still on a pending working holiday visa for Australia which is why I want to shorten my flight down to Bangkok.
I just want to get out there and have my luggage with me until I get the visa and take a flight to Australia later on.
My flight starts in Copenhagen in 2 days. Anyone can tell me if Thai air just changes the route easily without adding fees? Would be nice to know if anyone had a similar experience.

Depends entirely on the ticket type you bought e.g. Economy "Light" or "Flex" or whatever TG calls their different fare classes.

You should read the fare rules of your ticket type.

Nobody here knows what you bought.

The Terms and Conditions of changing your itinerary with your mystery fare class will be clearly explained on the Thai Airways' website.

What kind of ticket do you have? Not had a recent experience with airlines just changing dates without any additional fee, unless I'm on a flex ticket.

Terms and conditions can be found in your booking page

Another possible issue is they may not let you board the flight to Thailand, as you will be trying to enter Thailand without a booked & confirm onward ticket under a very odd set of circumstances.

Given the current attitude towards foreigners abusing visa-free travel, you may get denied entry if you have onward flight already booked & paid for AND the 20K THB (or equivlent in a foreign currency) cash requirement for entering Thailand.
