I have a gluten free hazy IPA that should be ready to drink today. I’m super stoked because it has a very strong passion fruit smell, which blows me away that I could get that kind of aroma just from hops and yeast selection. I did a quick taste test when I kegged it and it was really good. Based off a recipe I found that was the precursor to the best gluten free beer I have ever had, with some modifications to the yeast and fermentables.

So hefeweizen came out wrong... but not so wrong that it's drain cleaner. There's just an annoying level of phenols and a strange off flavor I can't place. It's not one of the commonly described ones, or at least it doesn't hit me the same way. Abv too low, ferment too cold, shouldn't have done the acid rest, don't know if step mash was needed, might benefit from rice hulls even with BIAB? Was hard to stir that, and might have contributed to low efficiency.
And even without a ph meter I can tell it's way too low. If I can tell, it's bad. A tiny pinch of bicarbonate in the glass makes a dramatic difference, smooths it out.
Oh well, we have a dubbel and a second runnings beer bubbling away right now, brew day went great. It's free rising up to just the right temp from a cool start.
It just hit me that it's entirely too much beer. We may have a slight problem.

Set my first attempt at a brew going yesterday. Nothing too fancy just a cider made from apple juice and raspberries. I've spent a good hour today just taking five to sit down and watch the airlock bubble away lmao

Made the first batch of my new recipe. trying to make a low ABV (4.1%) typical British pub ale -- drinkable, light, and .. so the thing wouldn't beat ur head after six pints.

It's far more rewarding for a beginner homebrewer to brew a half-decent (ne)ipa than some good common pale lager.

That would depend on the homebrewer, wouldn't it?

as a first time brewer I'll just feel rewarded if my cider is drinkable rather than vinegar or a mess on the ceiling lol

my brew log is getting out of hand. started color coding the entries by style last month and now i'm three shades of highlighter deep and second-guessing if my amber ale counts as "amber" or "deep copper"
at least my travel journal for that brewery road trip up the coast is immaculate, cross-referenced tasting notes with the GPS pins and everything
