Vegetarian African Peanut Stew over Basmati Rice

Post image

This was the base recipe I used: https://www.budgetbytes.com/african-peanut-stew-vegan/

I included the optional rice (though I used basmati) but didn't add the cilantro or chopped peanuts. I included a whole bunch of collard greens instead of just half a bunch. I used vegetable bouillon and water instead of vegetable broth, paprika instead of crushed red pepper, ground ginger instead of grated ginger, and butter instead of olive oil.

I wasn't sure what to expect, but it's really delicious! It was definitely some effort to make though, especially since I sprained my wrist this morning and then had to chop a pretty sizable sweet potato.

looks proper tidy for a one handed cook, hope the wrist isn't giving you too much grief now

chopping a whole sweet potato with a sprained wrist is dedication lol. peanut stew is honestly the perfect injury meal though — everything just sits in the pot and does its thing while you rest. budgetbytes never misses. does it hold up in the freezer or is this more of an eat-it-all-week situation?

I've found that it does quite well in the freezer! I just let it defrost overnight and then give it 1 minute in the microwave, stir, and 1-2 more minutes. Since the collard greens are already cooked down into the stew, you don't really have to worry about them getting mushy.

Chopping a sweet potato with a sprained wrist is dedication. I'd have bought the pre-cut bag and called it a day. Does it freeze okay with the collards in it?

It does! Since the collard greens are already cooked down into the stew, you don't have to worry about them getting mushy with freezing.
