As opposed to saying "Arlong could just snap is in half because of his jaw strength".

She already died in the time between the flashback and the present day. Nami and Nojiko still visit her grave in the 4Kids version, they just didn't want to show her being murdered on screen. Which, if you think about it, means her death was probably worse for her in the 4Kids universe. Instead of a quick bullet to the head she died in a dingy cell from either starvation, dehydration, exposure, infection or injuries suffered at the hands of Arlong and his crew.
Where the hell else would he put it? Somewhere outside the seat of his power, where all his strongest fighters hang out? That's a great way to get jailbreaks happening.
Not that it matters, because nobody on the writing team thought about it for longer than it took to ask and answer "how do we avoid saying she died".

If he bites down on the barrel I imagine the bullet would collide with his teeth and break off inside the barrel. At worst I could see Arlong taking some shrapnel to the face and lips, but with his tough skin I wonder how much damage that would actually do.

I don’t think so. Nami would have stayed there if Arlong never gave her the chance to try to gather that money, so the Straw Hats would have never gone to Cocoyasi in the first place.

I’m guessing Arlong would have noticed her finger move and bitten off the end of the gun before she could finish pulling the trigger, and I kind of doubt the bullet would go through his teeth with enough force left over to kill
It takes a hell of a lot to kill a Fishman anyways. Jimbe took akainu's ranged shot and survived somehow. Fishman likely have the tankiness of zoans as well, since they are animal hybrids too.
I never understood Guns in one pieces. Sometimes it hurts civilians sometimes not. And it never does anything to someone with some strength, unless you imbue with haki, and still no one dies that way.
But he caught it didn’t take a hit from it
Also the cannon is a ball it can’t hurt him but the bullet is sharp and it’s litterally in his throat so i think yeah he will get fucked
