Plate Potato scale fish

I know my presentation looks bad, but taste was really good

I used basa fish (farmed, not wild), so it has a mild, neutral taste

- Fish was tender & cooked

- Orange wine sauce reduction

- Tomato leek cream sauce

- Sauteed asparagus

Tell me more about this orang wine. And how much did you enjoy scaling the fish ahah. solid work, room for improvement, but looks lovely none the less.

8.9/10 - the plate gets you extra points

Sauce was easy, reduce orange juice, add herbs, white wine, reduce more, finish with thickened cream

Putting potato scales on was ok, I thawed basa fillet, but it still had some water in it.

So I had to reattach potato scales, they came off, definitely need more ghee, potato starch, etc it should set on fillet before pan frying. It didn't brown too evenly though, it tasted ok

Ahhhh I thought you'd found a wine made of oranges haha. Yeah it's defo a technical dish, so solid effort.
