Question Opinion
Hey guys I plan on getting a new knife soon and I’m quite torn between the Yu Kurosaki VG10W or the Saji-STRIX Gyuto? I’m an avid home cook so I’m just wondering is STRIX as good as people make it out to be and are Kurosakis blades as good as the hype that surrounds him? I understand it’s a loaded question but having experience with neither and being 2 different steels I’m curious to hear opinions as I’m really only familiar with ATS34!

These are both out of stock, at least for the original listings. Which one to grab? Idk I mean Saji was one of the cheapest sources for Strix period but tariffs and recent price increases have changed that a bit. Kurosaki looks a little too flashy for my taste.
Idk gun to my head probably the Saji, but at this kinda budget I'd also look into alternatives.

I can only offer an opinion on Kurosaki’s blades outside of specific steels. I have one of his gyutos in Aogami Super (with ss cladding) and can say it takes a wicked fucking edge and is one of the few knives where I’m always cognizant of how absolutely crazy sharp it is. He’s an excellent blacksmith and I can only assume he does just as well with other steels

I have the petty. It’s an astounding knife that has killer edge retention, sharpens like carbon steel, is fairly tough, and looks cool as hell. Highly recommended.
STRIX is the truth and sits atop the stainless mountain with Magnacut.
