Carol Shelby’s is a great starting point for chili. My favorite hack is to use leftover smoked brisket for the meat.

I keep hearing about this, but I have one problem. There is never, ever leftover smoked brisket in my house!

Carol Shelby is my go to lazy chili when I don't want to make it from scratch.

I make it from scratch, we don’t have the instant here in UK. I’ve been following his recipe for 30+ years and it’s been very well received by family and friends.

That's how I love my chili. There's no such thing as chili that's too meaty.

I like using Carroll Shelby’s spice mix. I greatly modify the recipe… I cube up about 3-4 lbs of chuck roast into 1/2” cubes, finely dice 1 onion, and don’t add any more than the 8oz tomato sauce. I also add chipotles and adobo and even some semi-sweet chocolate or cocoa powder. The min spice packet in Shelby’s is pretty good in my opinion, but it is just a base for building a good pot of Texas Chili.

This is a generic reminder message under every image post
Thank you for your picture post to r/chili. We want to remind everyone of Rule #1. All image posts should be accompanied by something to foster discussion. A comment, a question, etc is encouraged.
If you've posted a picture of chili, please explain why in a comment so people can have some sort of conversation. Simply dropping a picture of food in the sub isn't really fostering any discussion which is what we're all aiming for.
Posts that are a picture with no discussion can and will be removed by the mods.

Its a great base of seasonings. Add to or don’t use the cayenne packet at your pleasure.

Did you follow a recipe or use the kit? Was it good? I know it was an award-winning recipe, but his store-bought kit tasted like a catalytic converter the time I tried it.

Masa flour... I never heard of that. Sounds like it adds flavor?

u/Nate_Hornblower 2d ago
It thickens the chili, not much of a flavor enhancement
ETA: the post doesn’t mention masa flour, so you heard of it somewhere lol

Interesting. I just usually add some tomato paste if I need the chili to be thickened.

It’s not bad for store bought quick chili. Just lose the masa flour.

Curious why you don't like the thickener... ?

Because it’s thick enough without it, and it adds a weird consistency. I add onions when it’s simmering so it’s really not needed.

I got that recipe of the web like 25 years ago and still use my modified version

Yes sir! I dice a pound of mushrooms into mine, go heavy on the chipotle, use ground pork and diced chicken thigh, and plate with fresh pico and a little vinegar

Carrol Shelby over powered mustangs and cobras making them dangerous for regular drivers

I used it as a base and don’t really follow his recipe
