Am i insane? I love the taste of coffee. I prefer flavored creamer, but black is a-okay with me.

You're not. Most coffee is brewed too hot so a lot of people think that's how it always tastes. When it's done right, it can be amazing.

Coffee is supposed to be brewed with water fresh off the boil. Not sure how you can brew it too hot unless you’re making cowboy coffee or something

Boiling water has enough energy to dissolve all soluble compounds in freshly ground coffee at east to some degree, in a lot of coffees this means boing water will release bitter, astringent, and plant-like flavours that are generally undesirable to most people. Brewing coffee around 90C prevents many of these compounds from being extracted and gives a smoother cup. This is of course only one of many, many variables.

I’m a home coffee roaster. Some coffee don’t brew well at boiling temps. I usually go for 200-205 F or 93-96 C.

Dark roast can benefit from even lower temps to help avoid the bitter flavors.

Coffee should be brewed between 195 and 205.
