Rose is an artist (and maybe a con artist), watch it again, early in movie, we meet old Rose doing pottery in her artist studio. She is artistic.

Rose is not a reliable narrator, Jack was a figment of her imagination that helped her escape her life, since she felt she couldnt on her own.
