You have three options

One is to deal with the Hungry Hungry Caterpillar in deck. This is mostly a Nilfgaard thing, but sending him to the graveyard directly won't trigger Deathwish. That means Traehern, Kingslayer, etc. There's also Kambi or Shupe: Mage if you can get mega lucky. Iharraquax is also an option to draw it out of you have the ability to deal with it on that turn

Two is that there are only so many Consume options the opponent has that don't rely on being played without Viy being on the board. Haunt, Barbhegazi, Barghest, Slyzard... Don't let them stick. Destroy, lock or deactivate their conditions. If they have Toads, banish them with Squirrel. This has two effects. If they play safe, it stifles how big their Viy is meaning you can sometimes just beat them in raw points in whatever round flavour you like. If they don't play it safe, it means they'll be floating Viy to consumed next turn, where it can be locked or banished. They only have two always active unconditional consumes in Overwhelming Hunger leader, so try to force those out too if you can. Everything else is vulnerable to something

There's other counter options too - decks that typically operate really well against multiple tall units like Touissantois Hospitality or decks that can be just as greedy while still having punish options like Harmony can pretty easily keep up on points. Engine decks can sometimes just leverage their advantage too. The decks that struggle the most are pure pointslam decks that mostly play a pass game. You don't want to pass on Viy as each consume is effective carryover, so card disadvantage for them can easily be nullified with pure points

Remove Slyzards and Barbagazi Early, ave a tall punish and have enough engine value to justify going into a long round 3, or win 2:0 with tall punish.

Try to remove as many consumes from the board as you can. Commit to winning round 1 and save tall punish for last say in round 3.

Viy depends on matchups. You need a deck able to win round 1 and multiple tall punish. And/or multiple answers for consumes. Or just some greedy archetype, Viy usually has no control (some versions play Heatwave or Spores, when shackles costed 4 provisions Viy played it, but there's 95% probability your Viy opponent has literally zero control).

Also, Ihuarraquax summons your highest provision unit, for some opponents it's game over (Melitele, Simlas for Waylay/Harvest Spam), so your chances of winning depend on how much this play complicates your game plan (sometimes Quax can even backfire, e.g. summoning She Who Knows).

Viy seems very easy to play but it requires drawing/mulliganing right cards to keep the balance between consumes and "Viys" (cards that can tutor, summon and draw Viy - ideally, the Viy player wants to tutor and consume Viy every turn). Slyzards are "infinite" consumes so you should destroy them when they are still at 4 power, then the more consumes you deny, the better. Your Heatwave target is the scenario, your Squirrel/Lemmens target is Giant Toad.

Poisons are useless against deathwish, but if you play Syndicate, you can just float Failed Experiment (it's often spawned from Plunder), Viy has no locks so he won't answer it.

Tall punish, win round 1

It only works slightly less than half the time. But Ihuariquax combined with the lock strategem is a hilarious counter. Was actually run pretty often when the bug ruled the meta.

Viy decks lack control and aren't especially greedy. Just outgreed it with engine-based decks

Korathi Heatwave. Banish it the second you see it

I think the decks greatest strength is that it's not meta. If it ever became meta people would just slot a couple spores, heatwave, and damage specials that could kill death wish engines. They could go even further and make sure their highest provision card is a tall unit without a deploy ability or a really strong engine/threat card for unicorn pull.
