Homemade Niboshi Ramen in Manila π΅π
Sharing a bowl of niboshi ramen from our little pop-up in Quezon City!
We make a rich, fish-forward broth using niboshi (dried sardines), and I wanted to share this style of ramen with fellow ramen lovers in Manila. Itβs been fun bringing niboshi ramen to the local scene! π

Tried this in their last pop up. As a Niboshi ramen fan and someone seeking other ramen variations here in the PH other than tonkotsu - this was really good. The quail eggs were like ramen egg bobas lol

Love the addition of the dried sardine in the middle. So much flavor of the broth comes from that, so nice way to showcase a important ingredient

That broth looks incredible and the little rose of chashu makes this bowl look way too fancy to slurp without taking a picture first.
