As one of those people who has platinumed all of them, does shitty cosplay builds for fun, and has several tattoos of the series... I completely understand.
Personally, I absolutely love the esthetic, the lore, the feel of the controls. Everything about them is another thing that adds up to it being my favorite series. That being said, I can also see why some people absolutely hate them.
They are punishing games. Punishing for not knowing obscure mechanics never taught to the player. Punishing for never actually telling you where to go next, where to meet npcs, how to do any sort of questlines. Punishing for simply being bad at the game (especially Demon Souls). And i completely understand the frustration that comes from that kind of thing.
I enjoy the challenge myself. And I love the actual "souls" games that Fromsoftware makes, because any "soulslike" game I've ever tried, the ones that imitate the formula, all just feel extremely clunky compared to the actual games. The actual games have a smoothness to them (except ds2 but that's its own argument) that imitations never manage to capture, and exploiting the mechanics to your benefit is just super satisfying.
I'd also like to point out, as a side note, I'm not one of those players who uses glitches to fall through the map, skip areas, and all that nonsense. I play the game to play the game lol.
