Bread boxes are nice when you bake your own bread to put whole loafs. Like you kinda "cure" the loaf and after a day it feels more like store bought sandwich bread.
I wouldnt put something in there I wanted to stay crusty. Also. Its nice for when you slice two pieces off a loaf. The other bread in there keeps the sliced end from being overly dried out. Because its sorta like a humidor but for loafs of bread :)
I got a beeswax bread bag recently as a gift and I love it. We sometimes get a a delicious sourdough round from a local home baker, and it keeps soft for at least a week after being cut. I get the utility of a bread box. I actually just do fridge bread for the sammich loaves because I like it cold to start. The old mid-century ones are really cute.
I actually had no idea that’s what a bread box was used for. We had one, but we always put plastic wrapped store-bought bread in it, kind of defeats the purpose.
The whole point of the bread box is to stop it from drying out so fast. Plastic bags do a better job of it, but bread boxes predate the invention of plastic bags by at least at couple of weeks.
Just like a cigar humidor the wood picks up residual humidity and it kind of reaches a homeostasis. Depending on how much you bake and what you keep in it of course.
