I use it to keep vermin out. My cat is blind. I'm sure that is why they may have needed them back in olden times

That makes sense I also googled it after posting it and they said prior to preservatives in modern times bread would go stale much faster so the air flow was to trap enough moisture to allow it to live a day longer, but not enough trapped moisture to grow mold.
