The most highly marbled steak I ever cooked
A piece of A5 ribeye from Costco.
Had to get it because the amount of intramuscular fat on this guy was ridiculous.
Made searing super easy. Fairly thin too, so only about a minute or so per side for a good rare finish. Forgot to take a sliced pic until after we had attacked most of it. Inside was more washed put grey than red, prolly because of the fat.
Verdict. Honestly very meh for the price. Incredible flavor, very lush. But way too fat. It was more like eating a fat cap than it was steak. Good to try. Would not do again, especially at this price.
Youngest daughter loved it. Wife said it probably would have been better to thin slice it and then individually quick grill the slices like yakiniku.
I think I would agree.

So this had so much fat that I thought this was a loaf of bread when I first saw it

Give me Australian Wagyu over this every day.
I want my steak to have a higher meat to fat ratio personally

u/cantalwaysget 15h ago
I want my body to also have that ratio but we can't all win can we?

I'm not fat, I'm Wagyu

I wish I was a Wagyu cow, low stress environment with daily massages listening to classical music and the best fed food while overlooking some Japanese mountain.

Something this high in fat you share. This piece was for 6 people. Each person getting a few slices. It is definitely not a sit down and finish one by yourself type of experience.

While i agree the fat is more than what I would personally choose, I def wouldn't say no if this was put on front of me... lol

Absolutely! Best steaks I've ever had have all been Australian Wagyu. When I traveled there a few years back I thought Australian beef in general was excellent.

I agree. Wagyu is overrated.

Waygu is delicious. They are really going overboard tho. After a certain point it's more for Instagram than for flavor, taste and texture

u/ulikedagsm8 14h ago
I cooked a Wagyu steak of a similar size to this and I was almost gagging by the end. Way too overboard on the richness

Takes a while till you get older that you learn everything in moderation 😂😂😂,
Like no wonder if you eat Kobe beef in Kobe, the best way is to just eat a couple slices. Oh so tasty

I got one at Flemings that was god awful. I was so excited and it tasted like slop.
There is an Korean Grocery by me that has since shown me they can be magnificent.. but that one at Flemings really turned me off

One day they'll find a way to get rid of all that pesky muscle and breed cows that are 100% fat.

I don't get what is people's obsession with wagyu. I've had it like six or seven different times from different places just to try it and a regular beautiful ribeye from my local butcher is better 100% of the time.

u/Ok_Helicopter3910 12h ago
Its so weird. Like, I like the fatty part of a brisket but I mix it with the actual meaty part. I like a fatty part of a ribeye but I like it in combination with the meaty part.
This is just 85% fat. Whats the fuckin point ?
3
u/HairyBallsOfTheGods 12h ago
Exactly. It's too much of something that benefits and compliments another component of a perfect dish. It's like if you only had an orgasm and none of the build up and other sensations. It's too much by itself

Nice analogy. Nothing. Bam. Done. Not so fun. Better than nothing.

True.... Lol if someone offered me a really well cooked overly fatty waygu steak and my options were that or nothing....id choose that!

Cut with a little less fat than this eat very well.
It’s melt in your mouth fat that has a more complex profile than normal beef fat. And for sure you don’t eat it like a normal steak.8
u/HairyBallsOfTheGods 10h ago
That's the thing though, my favorite part about eating a steak is eating a steak like a normal steak. I love the chewiness, the texture of the meat. The fat gives it flavor and is a compliment to the meat, but I am mainly there for the meat fibers, not the gelatinous flavor bomb
I get other people may love it, and that's awesome! Go them, I hope they enjoy it for their entire life and it brings them much happiness... But I do not.

Usually a med-rare/rare guy myself, depending on the cut, but I prefer Wagyu like this to be cooked just a touch closer to medium.
I’ve found it more enjoyable that way but it’s still obviously incredibly rich. Tough to eat a lot of it at once but it’s nice from time to time

It looks insane.
I've never had Wagyu before, but at what point are you paying an extortionate amount of money for just a block of fat?
3
u/MindlessTime 11h ago
At that point I wouldn’t even eat it like a steak. I’d slice it real thin and use it in a sandwich. Something like a BLT but it’s wagyu instead of bacon. This could be a great ingredient in something. I wouldn’t eat it plain though.

I will eat butter, or toast with massive amounts of butter, so that looks pretty good to me. I also love beef/pork/chicken fat, especially well rendered and a bit crispy. But most people buy that type of steak to share with a bunch of people with each person getting a slice or two. I have had Japanese Wagyu in a steakhouse in Kyoto. It was amazing with the cuts of beef so tender that you could cut it with your chopsticks.
At least you got to experience it. And by your comment, a one and done lol.

You and I feel the same way. I got the A5 ribeye from Costco once and quickly realized grilling a whole steak normally was not even remotely the best way to eat it. Will never do that again. I'll do what you said basically, portion out, vacuum seal some portions, and cut one portion thin and grill it Japanese bbq style. More than a few ounces is just too much and I enjoy a well marbled steak far whole when served whole.

Its always good for an experience. But not a steak I would want regularly lol I raise wagyu angus cross and they usually end up solidly in the higher end prime marbling area which I think is more enjoyable. But A5 definitely is fun lol

Orrrr...just get you a big bucket of lard at that point. That not only looks unappetizing but just cannot be healthy for the animal...

At a certain point it starts to taste like you’re eating a slab of beef bacon

It’s true beef bacon, not that fake stuff they sell in the Middle East. Good bread there though.

u/Nooblakahn 14h ago
Huh. I've never seen a reverse marbled steak before. That's crazy.
I don't think I'd care for that, certainly would not feel confident enough that I would enjoy it enough to purchase this.
Glad you had the experience though I guess lol

All these people clowning. If you love it that’s sick. It’s intense for me so only having a few bites is all I can handle, but if you love it it’s really something special. I hope you enjoyed!!

I’ll take a Prime NY Strip any day over this. Even if this was free and I had to pay for the strip

A5 is basically bacon. You really can’t eat a whole steak of bacon. It’s so rich. I did it once and will probably never buy one again. Fun to try it though.

u/sputnik13net 10h ago
I don’t think anybody actually enjoys a5 steak. If they do not enough to do it twice. It’s like you have to say it was good but wouldn’t do it again just so you don’t feel horrible about throwing so much money at something.
If you look at the cultures that cultivate and eat such animals (Japan, Korea) you should also take note of the small portion sizes, and how there’s usually other food you eat it with to help deal with the fattiness

That's just a block of lard and it looks disgusting. I would never ever eat this. Give me a lean rare venison backstrap over this every single time.

That’s not intramuscular fat, that’s intrafatular muscle.
