What’s up y’all! u/ajp12290 here!
I baked sourdough professionally for a decade, bagels for 5 or so, French and non French pastry throughout, and have made ice cream professionally for years on and off as well! Over the years I’ve posted tons of various bread animals, sourdough loaves, French pastry, stoner cookies, and more recently a lot of homemade pasta!
After breaking my shoulder multiple times and undergoing multiple surgeries and procedures I had to figure out a way to modify the baking in my life with major limits and restrictions while navigating through daily pain and pinched nerves.
Though I can’t bake in bulk anymore and therefore am very limited on the professional scale, Ive started making pasta (like woven ravioli) and other ambitious dishes at home since I can only manage small batch these days and always look to keep challenging myself creatively.
Currently I make pastry and work ovens one day a week and make ice cream full time for Goldie’s Bagel and Sparkys Homemade Ice Cream in Columbia, Missouri and next year I hope to finally have a years in the making bread animal pop up called “Bread in Captivity”.
I don’t have a food blog or anything but I do post a lot of baking/ice cream/food stuff just for fun on my personal instagram if you wanna follow along just for the kicks @reggaetony_danza AMA!!

The homemade jam definitely elevates the taste of cake as it balances out the richness of the chocolate ganache.
It’s my first time and everyone loves the cake :)

Sauteed mushrooms, caramelized onions, roasted poblano pepper, scrambled eggs, hash browns, Parmesan black pepper chicken sausage, and smoked gouda. She was eating it before I had a chance to take a picture of the finished product. Excuse the mess.

My last one got deleted after 50 upvotes for not being more explanatory. It was my first time posting here so lesson learned.
Get a rolling boil. Room temp eggs for exactly 7 minutes. Put them in an ice bath. Cover with a thin layer of your favorite sausage and shallow or deep fry. I dust mine with flour or cornstarch for a crunchy outside. Some people use panko or breadcrumbs but I don’t like that version. Others make a meatloaf type exterior by combining sausage and breadcrumbs, but I prefer a spicy pork sausage only. Spicy mustard, brown mustard or maple syrup are all fantastic to dip them in.

Weather was down to 50 degrees today, so i thought this would be a great meal. Made Tonkatsu curry using the JAVA brand this time. I definitely like it a lot better than the S&B brand. Will be making this again forsure.
Onions, potatoes, carrots, chicken broth and pork chops. (Used sticky rice this time)The spicy panko was definitely the star or the show!
